Bubble Tea is a Taiwanese tea-based drink invented in Taichung in the 1980s, which also known as the Pearl Tea. It was a new style for serving tea and got really popular in Asia in the 90’s. Now you can found bubble tea teahouses like “Kung Fu Tea”, “GongCha”, “CoCo” almost everywhere in Chinatown in New York City.
Bubble Tea usually contains freshly brewed black tea with condensed milk and the chewy tapioca balls. Some teahouses offer different fruit flavors as well as different tea, so customers can choose their own combination according to their preferences.
The one I’m making today is Earl Grey Bubble Tea, you can choose different tea bags for different tea flavors.
Ingredients:
100 g Tapioca
3 Tea bags
30 g Brown sugar
30 g Honey
150 ml Milk
Instructions:
1. Boil a pot of water with brown sugar, and then add the tapioca, let them boil for about 10 mins and turn off the fire.
2. Use a mesh strainer to pick up the tapioca, and put them into cold water for 1 minute to cool down.
3. Boil a pot of water, add tea bags, milk, and honey in it. Let them boil for about 20 minutes. Add more honey and sugar in it if you prefer a sweeter taste.
4. Cool down the milk tea, prepare some ice cubes. Put the tapioca and ice cubes in a cup, and pour the milk tea in it. DONE ! 🙂
